About Huang Ji Huang

Huang Ji Huang is a Chinese casual-dining chain headquartered in Beijing, creator of the three-sauce simmer pot category, also known internationally as Simmer Huang. Founded in 2004 by Chinese culinary master Huang Geng, the brand grew through franchising to more than six hundred restaurants in China and in international markets, according to the group's corporate information.

Its signature dish is cooked at the table without adding water: meat, seafood and vegetables simmer in their own juices inside a sealed pot with the house's own blend of sauces, and the result is finished with broth and side ingredients. This standardised, repeatable format underpins its franchise model and its centralised seasoning and supply system.

Since 2020 Huang Ji Huang has been part of Yum China as a distinct brand, with its own website, restaurant network and identity within the Chinese dining segment. Its positioning combines an accessible average ticket, live cooking in front of the guest and a participative experience that sets it apart from traditional hot pot or roast formats.
